Who we are

Two friends, the passion for cooking, the desire to create something new. DanSi – Rinascimento Culinario was born from the intuition of two young Florentine friends and chefs, Simone Carta & Daniele Onofrietti.

Who think that talking about experience and young age is a contradiction, Simone and Daniele respond with the passion for the culinary art. It is this that prompted them to unite the theory with practice, seizing every useful opportunity, working in many tuscan restaurant.

 

In 2016 they decided to set up their business, not starting with the classic restaurant but creating something different: a dynamic and innovative project that would also translate the substance of their kitchen ideas into a real shape.

 

DanSi offers a versatile services, designed to create customized solutions. Buffet or Served catering, Food Truck catering, Private Chef service or Lunch Box delivery: all formulas are designed to be flexible and combinable with each other.

Philosophy

Like the Renaissance in the fifteenth century upset the art and culture of the time,
DanSi turns the concept of cuisine upside down.

Simone Carta

“I love the smell of fresh aromatic herbs and the soft texture of leavened dough.”

 

Born in Florence in 1993, he growed the passion of cooking from his grandmother and mother’s recepies, learning from them the first Tuscan and Ligurian traditional dishes. After graduation from the Culinary High School “Aurelio Saffi” in Florence, he continued culinary studies at the Master of Italian Cuisine in Vicenza, and then he worked in the most important Michelin Star restaurants in Florence, like Enoteca Pinchiorri and Ora d’Aria. An important working step is represented by the two years where Simone worked in the kitchen of the Acf Fiorentina sports center, where he played the role of Executive Sous Chef preparing daily meals for the team, in Italy and all around Europe.

 

In 2016, together with Daniele, he founded Dansi Rinascimento Culinario: he is CEO and Executive Chef.

Daniele Onofrietti

“Cooking from fresh ingredients is the base of my work.”

 

Born in Fiesole (near Florence) in 1991, he began cooking with putting his hands in pasta dough with his grandmother, learning the best secrets for preparing fresh pasta and Neapolitan desserts. After graduation from the Culinary High School “Aurelio Saffi” in Florence, he began immediately to work in kitchens of many restaurants in the Florentine hinterland: in this way, from a very young age, he acquired experience and leadership in the kitchen. He continues his experiences in famous restaurants in Florence where he refines many skills including, one of his favorites, the preparation of fresh pasta dishes and dessert.

 

In 2016, together with Simone, he founded Dansi Rinascimento Culinario, he still holds the role of Executive Chef and chief of staff.
